While the bee flies to its hive, on the way it enriches a drop of nectar with its own saliva, which contains many enzymes. During this process, nectar is already starting to transform into honey in the goiter of the bee.

Arriving in the hive, the collecting bee transfers the collection to the worker bee, it is also called the collector, who continues to work on the drop, bringing the saliva to the desired condition, then transfers the drop of honey to the honeycomb cell.

Honey ripens in cells. At this time, there is an intensive evaporation of water from it. When the honey is finally ripe, the bees seal the honeycomb with wax caps, which indicates to the beekeeper that the product is ready.

It happens that beekeepers take unripe honey (unsealed) from bees. But such a product is much worse stored, it contains a lot of undigested sucrose, more water than a sealed one.
